Egg Yolks Drying

I’ve had this photo on my desktop for about 6 months now, waiting to use it in a blog.  Well, that blog has now come:

This is a photo that a friend took on his trip to China.  They dry egg yolks.  Not sure what they do with them once they are dry, though.  I have a sneaky suspicion they either eat them, or throw them at each other.
